Our food production students have been putting their practical skills to work, using the barbecue made by Jumanne (see our post last week) to cook up a Tanzanian favourite, mishkaki.
Mishkaki is marinated meat cooked on skewers over a charcoal grill, and the students began by following an online recipe to prepare their own marinade. Once the barbecue was fired up, the meat was skewered and grilled until smoky, tender and full of flavour.
It certainly proved popular, with plenty of great feedback and even comments saying it was the best mishkaki in Moshi. A fantastic result from our students and a dish they clearly enjoyed making as much as everyone enjoyed eating it.
