Tanzania, like so many countries and cultures across the world, has its own unique recipes that are traditionally eaten during Ramadan, the Muslim month of fasting.

Whilst you may have heard of maandazi (a deep fried sweet bread) or kitimbua (a pan-baked rice cake), have you heard of uji?

Uji is a special porridge that accompanies iftar, the fast-breaking meal of Ramadan. It is not optional. Just as dates are a pre-requisite for every iftar world over, in Tanzania, uji is just as important.
